MIR Finish Quantum

There is another mail in rebate for Finish. The form is in the Smart Source that came in the paper this weekend. If you don't get that you can go to their Facebook page and print the form. Buy 20 count Finish Quantum between Sept 22 and Oct 12(dates are a bit different for the Facebook MIR) and get up to $8.49 back. There are several $2 off coupons out there, and if you could use this on a 20X the points day at Shoppers or 10% off day, you could stand to make money from this MIR! I did this one this year and the turn around was really quite fast. I mailed it April 16th and got the cheque May8th. (I write on my calendar the day I pop it in the mail and the day I get it back. I also photocopy my receipt and MIR form for my records.) I was happily surprised to receive $10.12 as they pay you the tax and postage as well! Have you tried MIRs yet?

Whole Wheat Bread Bowls With Hamburger Soup

This is the best supper ever....really. Hamburger soup inside of whole wheat bread bowls!
Don't be intimidated by the bread making. I always have a little talk with myself before making bread. "Now, Sue, remember, bread making isn't hard(especially with my Kitchenaid mixer, thanks mom and dad), it just takes time to rise." Really....

Here is the time break down.
1. It takes 5-10minutes to let the yeast ferment.
2. 10 minutes of kneading
3. and then a total of 2 hours rising.
 4. Baking time says 45 minutes, but that is too long in my oven. I went with 35 minutes and still they were a little bit burnt browner than I wanted!
The idea came when I was menu planning. One of my favorite cooking blogs, How Sweet It Is, had this recipe. When I menu plan, I take into account the weather of the week as well as our schedule. It was to be rainy on Tuesday, or so the weather guesser  man said. So, I thought, I have lots of whole wheat flour, we love hamburger soup, why not try this recipe?  The hamburger soup recipe is here.
I served it with a caesar salad, but be forewarned, it is sooooo filling all by itself! I taught the kids their cooking lesson, using this as our menu. Our goal is that they will each cook a supper, per week, eventually. ;)

Prune Plum Pie

First of all let me say again, I LOVE where I live. Seriously! The fruits and veggies available, blow my mind! I also want to say thank you. Our friends asked us if we would care to do some gleaning, from their full plum tree....yeah! I got some for my neighbour, my sister-in-law, as well as lots for us! I hate to see yummy food go to waste, and so my mission was to figure out how to use up plums! On my way home from picking the plums I had stopped at Shoppers and they had whipping cream with a $2 off sticker, so I needed a yummy thing that we could put whipping cream on. Heck, all we needed was a little coffee, right Ruth? My boy wanted to me make to something different, not my usual go to plum recipes. He asked if I could make pie.I didn't know, was there plum pie? So, I did what we all do, I googled it.  I found Have a Piece of Pie! I didn't want the traditional crust, so I followed her recipe for the filling and then went to the site Pick Your Own. She has the graham cracker crust with the crumble to go on top. I used the graham crust recipe I usually use. I used her recipe for the crumble on top.
The graham crust
1 1/4 cup graham crumbs
1/4 cup sugar
1/3 cup butter
You can either cut the butter in with a pastry cutter, or just melt the butter and mix it in. Press the crust into a pie plate.

The filling:
6 cups plums pitted and thinly sliced
3/4 cup sugar
3 tbsp cornstarch
1/2 tsp salt
1 tsp all spice
Mix all these ingredients together and spoon into your pie crust.

The crumble on top:
1/4 cup sugar
1/2 cup flour
1/4 cup butter
Same as the graham crust, you can melt the butter or cut it in. Sprinkle over fruit mixture. Bake at 425 for 35-45 minutes.

I followed the recipe's directions to bake for 45minutes to an hour. 45 minutes was already starting to burn, so I adjusted the time above.

It is sooooo yummy! But, so filling!

I decided to make a plum sauce with some of the other plums. I didn't follow a recipe. All I did was cut the plums in half, and take out the pits. I then added some sugar and a little cornstarch. Then I cooked and cooked and cooked it. It became a nice sauce, but there were still plum strings and pieces. I wanted a smooth sauce so I...... carefully!!!! spooned out the big chunkies into my blender and blended them up. Then I added them back to the pot and fished around for any other chunkies! In the end  the sauce below.

I had this lovely big glass jar to put it in! I made some overnight crepes and in the morning we will have crepes with plum sauce inside and whipping cream on top. Are you coming for breakfast?

Cheese, Chicken Cordon Swiss and Flour

This week at Costco there were a few deals worth mentioning!
The boxes of 8 cordon swiss were are on for $7.59. I have seen them cycle Jan, Apr, May and Sept. This is the lowest I have seen them go! Last September they were $8.09! We love this as a nice easy, tasty dinner!
Armstrong Cheese is on for $7.59 got the 900g package. This makes it $8.43/kg! It tends to cycle at Costco in Jan, Sept and Dec. This is the lowest price I have seen it go at Costco! It doesn't expire until May of 2013, so you can stock up!

I am almost out of flour. I usually buy my flour at Costco, but I usually buy the 10kg. My sister in law was with me and pointed out that not only was this a bit cheaper, but also unbleached. 20 kg of flour $12.79. Thanks Lynn!

Grilled Pizza

This summer my cousin taught us how to make grilled pizza! She's an amazing cook. Her blog is here. When I menu plan in the summer I usually skip pizza because it's just too hot to start the oven. This year that problem was solved with a  broken oven. Now, with this when we can have pizza in the summer!
I put the pizza crust ingredients.
1 1/4 cup warm water
2 Tbsp oil
2 1/4 tsp yeast
1 tsp salt
4 cups flour
Bread makers vary as to how long the dough cycle takes. Mine takes 2 hours.

Once the dough is done. Grease a cookie sheet and press and roll the dough into it.

Preheat the BBQ and then turn it down to med. Place the dough right onto the grill. Watch it carefully, as you can see it can burn easily. It only takes a minute or two to brown the dough. Take the dough off the grill by using 2 large spatulas. I used another cookie sheet to flip it so that the grilled side is up.

Load the crust with all the toppings you like. The sky is the limit. I put an upside down cookie sheet on the grill in order to keep from burning it.

Heat until the bottom of the crust is browned and the toppings are cooked.

Add a little salad and you have a great meal. Thanks Ashley!
