Fire on the Lake

There's a fire on the other side of the Lake Okanagan. It is estimated to be 30 hectares in size! To read the news story you can go here.
I went out to my cousins this morning and got a few shots of the fire, the water bomber and the helicopters. In this picture there are 2 helicopters, I know they are hard to make out. One is to the left at the very edge of the picture, the other one is in the middle of the picture just dropping water.


I know these pictures aren't fantastic(neither is my camera)but you can get the gist of the water bomber and his fire retardant dump.


They are working hard with 3 helicopters and the water bomber. The air smells like camp fire. The side of the mountain is red with the fire retardant. Many home owners are under evacuation alert. My uncle died fighting a fire in his helicopter many years ago.

SCOP, Deals and More

My sister in law found this amazing deal. Coopers accidentally ordered WAY too many of these Lean Turkey Cheddar Burgers. These boxes usually go for $13.99 but they blew them out for $3!!! My Coopers was totally out, but hers still had some!(You may be able to still get some!) She was kind enough to get me some and send a picture! Thanks Lynn!

I found an oven! This Faberware was pretty much new. I bought it through Castanet. It can hold a 12inch pizza, a dozen muffins or a whole chicken! I am excited to have an oven to use out on the deck while it's hot, and to tide me over until we decide what to do about our broken oven.
This is a fun story! So, I was in Costco this week and I saw they had the packs of 3 chickens for $2 off. There was a sign over the chickens stating you get $2 off at the till.  I didn't get any at that time, but after I left I thought I should have. Costco's sales usually run until Sunday close so once I bought the rotisserie oven I needed some chicken to try it out! Today, while doing errands I did a quick stop at Costco. Just a side note but today the stores were absolutely quiet. Seems everyone was at the beach. I had already got my sunburn for the day, so I was happy to run in and out of the AC!

My 3 pack of chicken was $24.05. When I went through the till the $2 didn't come off. (Ashley, I was that woman! )They called someone over to go and see if there really was a sign over the chickens. The clerk brought it back with him, sure enough they were $2 off, until yesterday!!! The manager was called over(seriously, I was causing a pile up!)and the cashier asked if he should still give me the $2 off as it was their mistake the sign was still up. The manager said no, $10! This is a SCOP! So, 3 chickens for $14.05! Yippee!!!

Of course, I had to try out the rotisserie as soon as I got home. I wonder who gets to clean the drip pan????

Huli Huli Chicken


Have I told you how much I LOVE America's Test Kitchen's Slow Cooker Revolution???? It's fantastic!  So much fun having so many great slow cooker recipes(again, thank you Linda!).

The sauce needs to be prepared ahead of time and takes 10 minutes. Here's a picture of the ingredients.

I opened that huge tin of pineapples and took out 2/3 cup of pineapple juice.
It also calls for 1/2 cup brown sugar.

I opened that huge can of ketchup(all our bottles needed refilling any ways) and took out 1/2 cup ketchup for this recipe.

It calls for the juice of 2 limes, but I only had one large one.

It calls for 6 cloves of minced garlic(I have a big Costco jar of crushed garlic in the fridge).

My mom told me to keep a hunk of ginger in the freezer as it's easy to grate. Thanks mom! 2 Tbsp are needed for this recipe.

1/4 cup soya sauce

Simmer for 10 minutes.

The recipe says add 1/2 cup of the sauce to the crock pot and reserve the rest. I think next time I would use at least  a cup of the sauce.

Season the chicken with salt and pepper and coat with sauce. I used 4 chicken breasts that had bone in and skin on.

Cook on low for 4-6 hours. If your crock pots are anything like mine I would  stick to 4 hours or less.

This is the reserved sauce.

After 6 hours.

The recipe says to put it in the oven at 450 for 20-30 minutes.
As my oven is kaput I opted to use the barbeque.

Brush the chicken with reserved sauce every few minutes and bake until it has a nice glaze.

We used the left over sauce for dipping. The sauce was soooo yummy!

Raspberry Cream Muffins

We were able to get out raspberry picking. We found a new place on Wallace Road that charges $2/lb. Here's a sampling of their berries in the bottom picture. They were HUGE, but not very plentiful. Half an ice cream bucket cost $4.
Yesterday we went to Glenmore market. They are $2.60/lb there and there were lots to pick. For an ice cream bucket and a half it cost $15.10. (
They are shown in the first photo).
When we used to live in Alberta we would go to Roy's Raspberries. When you left they would give you a sheet of recipes. One of our favourites is the Raspberry Cream muffins. The original recipe is here.
Since we really like to eat fresh out of the oven recipes and my oven is out of commission(totally now!). I decided to cut this big recipe in half.

The dry ingredients are
2 cups flour
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

The wet ingredients are
2 eggs lightly beaten
1/2 cup oil
1 cup sour cream
1/2 tsp vanilla

1 1/2 cups raspberries which you can toss with the dry ingredients.

Add wet and dry and mix just to moisten.

Bake at 400 for 20-25 minutes. I cooked these 6 at a time in my toaster oven. It makes 10.

Once sleeping beauty wakes up, she'll be so excited to have some of these!
