Mango, Brown Rice, Black Bean and Veggies Salad

You've gotta try this salad! Seriously, it's so good and tasty and easy. I found the original recipe on Pinterest here. I was menu planning and craving some black beans. I cooked my dried black beans in my Crockpot the day before. That's easy! It took a little planning as I soaked the beans overnight Thursday then cooked them on Friday on high for 3 hours then low for another 3 hours. Rinsed and drained them, froze some and kept some for this yummy salad.Friday night's supper was stew kabobs and brown rice(this is the brown rice from Costco, very nutty tasting), making extra rice so that we'd have leftovers. I modified the recipe for the salad to fit what we had on hand. So here it is.
Mango, Brown Rice, Black Bean and Veggie Salad
1 Mango 
1/2 Green pepper
2 Carrots
1 cup black beans
2 cups brown rice
Cut up all fruit and veggies into small pieces. Mix all ingredients together.
Dressing
3 large limes squeezed for juice
2 Tbsp honey
1 tsp ginger
Mix all together and either pour over the rice and veggies or serve on the side. I was skeptical about the dressing so we had it on the side....It's a great dressing!  Enjoy!

Easy Summer Salad

This salad is so yummy, so easy and so changeable! It's a what you have on hand salad! Feel free to add or subtract whatever to make it your own. Don't want to make the dressing? Use bottled!
Easy Summer Salad
1 can chick peas
1 can olives
Pasta, tricolor, already cooked
Cut up peppers
Cut up tomatoes or grape tomatoes
LOTS of fresh basil! Lots! Like 10-15 leaves!
Feta cheese crumbled
The Dressing
4 Tbsp Red Wine Vinegar
4 tsp olive oil
2 Tbsp honey
Salt and pepper to taste
Mix everything together and put it in the fridge for at least 20 minutes before serving!

Steak Salad

It's been hot! Really hot. Time to eat salads. As hubby enjoys meat with all his meals we used this left over steak that we had barbequed the night before. We used top sirloin and sirloin tip. The recipe is here. I used half the dressing recipe as I was only making two salads. I substituted feta cheese and skipped the endive. I think I might use a little less olive oil next time.

It was soooo yummy!

More Sales this week and Salad Recipe

Pictured here is one of our favorite salads. It's so yummy and so easy. All you need are some peppers(they are on sale again this week at Old Town Market), some tomato, cucumber, red onion and feta. Add a little red wine vinegar and olive oil and you have a tasty and beautiful salad.
I have been trying to get the sales up earlier by looking at the flyers online. The problem with this is that several do not post their online flyer in entirety or they don't put it up until later in the weekend. So, when I got my flyers to the door I saw some deals that were worth posting.
