Gluten Free Crepes

This week I was thinking of recipes to use lots of milk and eggs. I thought of crepes. Chicken Caesar crepes! My oldest daughter first introduced me to them and they are sooooo yummy. We haven't had them since hubby's diagnosis so I decided to try making them gluten free. I looked at all sorts of gluten free cookbooks and then went on-line and googled recipes. It's always about the flour.Since I had good success with the ATK version I thought I would try substituting it in for the flour used in this recipe. It seems with gluten free cooking it is a good idea to let the mix sit. This recipe called for it to be refrigerated overnight. These were really good eaten fresh. Like rice tortillas they tend to be less flexible than the real flour versions. I suggest you make enough for your family to eat fresh. We did try and use the leftovers the next day for scrambled egg and cheese wrap, but found them fairly uncooperative!

Gluten Free Crepes
1 3/4 cup flour(ATK Gluten Free Flour Mix)
1/2 tsp salt
3 eggs
2 cups milk
2 Tbsp butter (melted and cooled)
Combine wet and dry in separate bowls then add altogether and whisk until smooth.Refrigerate overnight or up to 2 days. (I just refrigerated it for a few hours and had good results)When ready to use take out of the fridge and allow to come to room temperature. Heat electric frying pan to 350. Oil the pan. Using a ladle full of mix pour onto pan, quickly tilting the pan side to side to make an even covering. Cook for 1-2 minutes on each side. Serve right away.
The chicken was really easy as I just took the frozen, boneless, skinless breasts and put them on the George Foreman grill for about 10 minutes!

Bacon Pancakes!

I was on Pinterest the other day when I found this recipe! Bacon inside of  pancakes, is there anything better?
So, I was inspired to try them this morning! First, I did the bacon(to perfection) on my new to me George Foreman grill! Then I substituted our pancake recipe for the pancake mix in the original recipe.
Pancake Mix
2 eggs
1/3 cup oil
2 1/4 cup milk
Mix wet together
3 cups flour
2 tsp salt
1/2 cup sugar
3 1/2 tsp baking powder
Mix dry together, add to wet, mix just until combined.

Of course I didn't have everything! I thought the mayonnaise squeeze bottle I kept had a large pouring spout, but it didn't!  I improvised and used my pouring measuring cup. They aren't perfect, but they are still tasty. I poured a long line of batter onto a preheated(375) frying pan. then I pressed the cooked bacon piece into the batter and poured a thin line of batter over the  bacon. Then I just continued to cook until done! So, yummy!

Waste Not Want Not?

How about the tortillas last week? Want a recipe to use both? How about breakfast burritos? My oldest daughter introduced me to these a few years back, and we love them! I was lost in the world of Pinterest the other day(once again) and found out that you can freeze them! Yesterday, my brother and sister in law were leaving town and dropped off some veggies and a few tortilla shells. I love using things up so as to waste nothing and so an idea was formed!

The lovely thing about these is you can put whatever you want in them! I cooked up some organic mushrooms (thanks Jas and Lynn), some spinach, peppers, garlic and bacon pieces. Then I scrabbled a dozen eggs.

I put a bit of each on each shell, as well as a dollop of salsa. You could add cheese if you wanted to.

I used plastic wrap to individually wrap each one.

Then I popped them back into the bags the wraps came in, put the date on, and threw them in the freezer! 14 breakfast burritos made in short time, and nothing wasted. Happy dance! :)

This Week's Sales

Rexall has Colgate toothpaste and toothbrushes for .88. As you can see there was an insert coupon for $1 off any Colgate Total Advanced toothpaste. Making them free! The Royale I circled when I thought I could combine the $1 off coupons from Gocoupons. They, however are for 12 or 24 packs. This deal is for 8 or 16 packs. :(

3 day sale has eggs 2/$4. If you have the get cracking coupon from websaver shown above you could get them for $3 for 2 dozen! Now, when we went to actually do this, I noticed that the bill said $4.91-1.00=$3.91. I pointed it out to the teller she said that since I used a manufacturer's coupon, the register only gives 50% of the coupon value! It had been happening all day and they didn't know why! So, she had to give us the difference. All this to say watch your bill!
 The 4 Ls of milk are $1.50 off(Feb 22-24) with coupon code 54158. It's on sale for $4.39-$1.50=$2.89

Breakfast Ideas: Waffles

These waffles are one of our favorite breakfasts. You can make a double recipe on a weekend, freeze the remainders and have your own ready made waffles in your freezer! (You can put the dry ingredients together the night before so that there is one less step.)This waffle iron was purchased second hand. You can usually find them at thrift stores or garage sales.

This is my grandpa's recipe!
1 1/2 cups flour
2Tbsp sugar
1Tbsp baking powder
1/2 tsp salt
Stir together, make a well.
2 egg whites, room temperature
2 egg yolks
1/4 cup melted marg
1 1/2 cup ,milk
Beat egg whites until stiff. Using the same beaters, beat egg yolks in separate bowl. Add marg and milk. Mix. Pour into dry ingredients well. Mix. Fold in egg whites. Pour batter into preheated waffle maker. Let bake for 4 minutes.
I decided to go to the Kellogg's site and get the ingredients for homestyle waffles so we could compare.

One of the advantages of making food from scratch is skipping some of the perservatives and additives. Anything with a #6 and a color....hmmm..I'll pass. :)



You can alter this recipe in many ways. Add some whole wheat flour, flax, chocolate chips, or berries.
I decided to figure out what this recipe costs, approximately. I figured it out with the purchase prices of late.(For example the last time I bought sugar and flour.)
The grand total came to $1.40 for a single recipe. Which makes about 12 rectangles.

We had some yummy frozen blueberries which I heated up to pour over our waffles.

When I make a double batch I usually have a dozen to freeze. I lay them out on cookie sheets and freeze them. Then I pop them into freezer bags. They are all ready to go into the toaster! Hope this makes your morning happier! :)

I've got lots of eggs!



Thanks to my mom and dad!!! I've got lots of eggs! My oldest daughter made this cookbook and made us Chicken Caesar Crepes one day. They were delicious so I thought I'd share the recipe with you.  First off I doubled the recipe above, as one batch only makes 4 crepes. I used setting 3 on my glass stop stove to cook them just right.




Meanwhile I had some chicken that I had precooked, warming.We spread some Caesar salad dressing, a little grated cheese and Parmesan, as well as the chicken and some salad greens, then we rolled them up. Serve them with a salad or soup. Yum! It's a great busy night supper as you can premake the crepes(this takes less than 15 minutes) and precook the chicken.

Freezing Eggs????

Freezing eggs??? You can do that? This is a question I have heard many times and so I thought I would bring you along while I get some of my lovely eggs from my parent's chickens into the freezer. Mom likes to bring us LOTS when she drives out to see us, because it could be a long time till we see her again. Their eggs are the best! We feel so sad when we run out. I wouldn't want them to go bad and I know I'll be baking lots this winter, so freezing is a fantastic option.
















To Freeze Eggs....break 5 eggs into a bowl, add 1 tsp of salt, lightly mix.
You can put them into plastic containers or bags. I write the expiry date right on them(6 months)as well as directions that 3 Tbsp=1egg. The night before I need them I take them out and thaw them in the fridge overnight. Viola! Eggs!





























What can you do with these eggs, you ask?? You can use them in baking, for scrambled eggs(don't add salt), waffles, pancakes, casseroles...pretty much use them like you would fresh eggs, only you can't have sunny side up!
